Creamy Salmon

  • 2.5 lbs salmon
  • 1/2 cup butter (softened)
  • 1 tbsp olive oil
  • 1/2 white onion, chopped
  • 3 cloves garlic, minced
  • 0.5 lbs white mushrooms, sliced
  • 1/3 lbs cherry tomatoes
  • 0.5 lbs baby spinach
  • 1/2 cup water
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 1 lemon, sliced
  • Salt and black pepper to taste

Prepare the Salmon: Pat the salmon dry and make shallow cuts across the surface. Fill a piping bag with softened butter and pipe it into the slits. Sear the salmon in a skillet until both sides are golden and the skin is crispy. Remove and set aside.

Make the Sauce: In the same skillet, heat olive oil and sauté the white onion until fragrant. Add garlic, mushrooms, cherry tomatoes, and spinach. Cook until softened.

Simmer Everything Together: Add water and heavy cream to the skillet. Season with garlic powder, salt, and black pepper. Bring to a boil, then return the seared salmon to the pan along with lemon slices. Cover and simmer on medium-low heat for 5 minutes.

Check Doneness: Use a ThermoPro TP19H Meat Thermometer to ensure the internal temperature of the salmon reaches 140°F (60°C).Once it reaches your desired level of doneness, remove from heat and serve.
