- 1 lb chicken cutlets
- 2 cups flour
- 4 eggs
- 3 tbsp mayonnaise
- 3 tbsp tomato sauce
- Breadcrumbs, as needed
- Salt and black pepper to taste
- 1/2 lb cabbage, shredded

Pat chicken cutlets dry with paper towels and cut each in half lengthwise.

Lightly pound both sides with the flat side of a knife to tenderize and even out the thickness.

Score the edges to prevent shrinking, then season with sea salt and black pepper.

Coat in layers. First, evenly dust the chicken with flour, shaking off any excess amount.

Dip into beaten eggs, ensuring full coverage.

Finally, coat evenly with breadcrumbs, pressing gently to adhere firmly.

Heat oil to 320°F (160°C) using a ThermoPro TP622 Lightning to check the oil is at the proper temperature.

Gently place chicken cutlets into oil and fry over medium-low heat for 3-4 minutes, flipping once to ensure both sides are crispy.

Remove with a slotted spoon and place on a wire rack to drain excess oil, preventing the bottom from becoming soggy.
