- 1 cup water
- ½ cup dark brown sugar
- ½ cup pumpkin puree
- 2 cinnamon sticks
- 6 whole cloves
- 4 whole all-spice berries (optional)
- 5 pieces fresh ginger (1 inch each)
- 2 oz rum, light or aged
- 1 tsp pure vanilla extract

Heat water and brown sugar in a pan. Add cinnamon sticks, cloves, fresh ginger, and pumpkin puree.

remove from heat once the temperature reaches 173°F (78°C). Cover with a lid and let steep for 20 minutes (use a timer like the ThermoPro TM02).

In an ice cube-chilled glass, add the rum and vanilla extract.

Once the spice mixture has cooled, strain and pour it into the glass. Stir gently, serve, and enjoy.
