- 6 Tbsp. Butter, softened
- 3/4 cup Applesauce
- 2/3 cup Sugar
- 1 Tbsp. Milk
- 1 tsp. Vanilla Extract
- 1.25 cups Flour or Gluten-Free Flour Blend
- 1 tsp. Baking Powder
- 1 tsp. Cinnamon
- 1/2 tsp. Baking Soda
- 1/2 tsp. Ground Ginger
- 1/8 tsp. Nutmeg
- Pinch of Allspice
- Pinch of Salt
- 3 Eggs
- 1 cup Apples, peeled and chopped
- 1/2 cup chopped Walnuts, divided
Icing:
- ½ cup Powdered Sugar
- ½ tsp. Vanilla Extract
- Milk to thin

Preheat your oven to 350°F (177°C). In a bowl, cream together the butter and sugar. Add the applesauce, milk, and vanilla extract, and mix well.

In another bowl, combine the flour, baking powder, baking soda, spices, and salt. Pour the dry mixture into the wet ingredients and mix until combined. Whisk the eggs and incorporate them into the batter. Fold in the chopped apples and half of the walnuts.

Grease an 8” pan and line it with parchment paper. Pour the batter into the pan and sprinkle the remaining chopped walnuts on top. Bake for 45–50 minutes, or until the internal temperature reaches 190–195°F on your

. Let the cake cool completely.

After the cake has cooled, sift the powdered sugar into a bowl. Whisk in the vanilla extract and add milk 1 teaspoon at a time until the icing reaches your desired thickness. Pour the icing over the top of the cake. Slice and enjoy!
