  • 14 chicken drumsticks
  • 14 strips of thin bacon
  • 6 tbsp BBQ rub
  • 14 toothpicks
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 4 tbsp sriracha
  • 4 tbsp apple cider vinegar

Make a cut around the bone near the joint of each drumstick to sever the connective tissue. Remove any loose cartilage or tendons. Push the meat down towards the thick end to form a “lollipop” shape and season generously with BBQ rub.

Wrap each drumstick with a strip of bacon and sprinkle with BBQ rub again. Secure the bacon with a toothpick to keep it in place.

Place the chicken lollipops in a smoker or oven preheated to 275°F (135°C).

Once the internal temperature reaches 165°F (74°C), mix honey, BBQ sauce, sriracha, and apple cider vinegar in a saucepan and bring to a boil. Dip each lollipop into the sauce mixture to coat.

Return the lollipops to the smoker or oven and continue cooking until the internal temperature reaches 185°F (85°C), allowing the glaze to set and caramelize. Remember to use a ThermoPro TP02S Digital Instant-Read Meat Thermometer to monitor the temperature.
