Generously sprinkle both sides of the salmon steak with sea salt, lemon juice, and freshly ground black pepper.

Heat an skillet over high heat until it begins to smoke slightly. Add a small amount of oil and swirl to coat evenly.

Place the salmon steak in the skillet. Maintain high heat and sear each side for 2-3 minutes until a deep brown crust forms.

Using tongs, briefly sear the sides of the salmon to seal in the juices.

Use the ThermoPro TP622 Lightning to measure the temperature; remove from heat when it reaches 130°F.

Bring water to a boil in the skillet, add the green beans, and cook for 2-3 minutes until bright green. Immediately transfer to cold water to retain crispness.
