Préparation de la recette
- 1 lb ribeye steak
- Olive oil
- 1 white onion
- 3 potatoes
- 1 head of garlic
- 1 cup butter
- 1/2 cup milk
- 1 bunch chives
- 1 bunch parsley
- 2 tsp sweet paprika
- 2 tsp red pepper flakes
- 1 tbsp whole grain mustard
- 1/2 tbsp minced garlic
- Zest of 1 lemon

Sear the Steak: Season the ribeye with salt and black pepper. Use a ThermoPro TempSpike Plus Truly Wireless 600-ft Meat Thermometer to help you determine when the steak has reached an internal temperature of 140°F (60°C). Insert the probe into the center of the steak, set the target temperature, and cook until alerted by the TempSpike Plus. Remove the steak from the skillet and let rest for 5 minutes.

Saute the Onion: Heat a skillet, add olive oil, and saute the onions until soft. Season with salt and black pepper.

Prepare Mashed Potatoes: Peel the potatoes, boil until fully cooked, then mash. Mix in roasted garlic, butter, and milk, stirring until smooth. Season with salt to taste.

Make the Cowboy Butter: In a skillet, melt butter, then add sweet paprika, red pepper flakes, whole grain mustard, minced garlic, lemon zest, chives, and parsley. Stir until the mixture forms a flavorful sauce.

Combine & Assemble: On a plate, stack a layer of mashed potatoes with the cooked onions, the steak sliced into cubes, and then the cowboy butter on top. Enjoy!
