  • 1 whole mackerel (approx. 1 lbs)
  • 1 serving of french fries
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 tsp baking powder
  • Beer as needed
  • Salt & pepper, to taste

In a bowl, combine flour, cornstarch, baking powder, salt, black pepper, and beer. Mix into a thick batter and let rest for 10 minutes. Set aside.

Pat the pomfret dry, remove bones, and cut into bite-sized strips. Season with salt and black pepper.

Preheat vegetable oil to 320°F (160°C). Coat fish pieces in batter and fry until they float and turn golden brown. Maintain oil temperature above 320°F (160°C) throughout frying with the help of a ThermoPro TP510 Oil Thermometer.
