  • Chicken seasoning powder, as needed
  • BBQ sauce, as needed

Rinse the chicken breasts and pat them completely dry with paper towels.

Evenly sprinkle the chicken seasoning powder over the surface and gently massage to help the seasoning adhere. For deeper flavor, refrigerate and marinate for 20 minutes.

Preheat the smoker grill to 275°F (135°C). Insert the probe of the Twin TempSpike into the thickest part of the chicken breast and set the alert temperature on the mobile app to 158°F (70°C).

When the surface of the chicken looks slightly dry and has darkened in color, brush on a thin layer of BBQ sauce. Continue smoking, brushing with BBQ sauce every 10 minutes to build a glossy, flavorful coating.

When the wireless thermometer alerts that the internal temperature has reached 158°F (70°C), remove the chicken immediately.Let it rest for 5 minutes to allow the juices to redistribute — this prevents excessive juice loss when slicing.
