  • 2 lbs salmon
  • 1/3 cup eel sauce
  • Salt & black pepper (to taste)
  • 3 tbsp butter
  • 2 cloves garlic
  • 1/4 cup brandy
  • 1/2 cup heavy cream
  • 1 lemon
  • 1 head broccoli
Recipe Instructions

Pour boiling water over the skin side of the salmon to loosen it. Once removed, roll up the salmon fillet and tie it with kitchen twine to hold its shape. Season the rolled salmon with salt and black pepper.

In a hot skillet, melt 2 tbsp of butter and sear the salmon. While cooking, brush with eel sauce. Cook until the internal temperature reaches 130°F (54°C). Use a ThermoPro TP19 Meat Thermometer to determine when the optimal temperature has been reached. Remove the salmon from heat and let rest.

To make the sauce: In the same skillet, melt 1 tbsp butter and saute the garlic until fragrant. Add brandy, heavy cream, lemon zest, and chopped parsley. Simmer until the sauce thickens.
