  • 3 lbs salmon
  • 1 white onion
  • 5 garlic cloves, minced
  • 5 oz mushrooms
  • 1 red bell pepper
  • 3 1/2 oz spinach
  • 1 cup heavy cream
  • 1/3 cup parmesan cheese
  • Salt & black pepper (to taste)
  • 1 tbsp butter (optional, if not using oil)

Cut the salmon into portions and season with salt and black pepper. Heat a skillet and melt the butter. Sear the salmon until both sides are golden, and the internal temperature reaches 120°F (49°C). Use a ThermoPro Lightning One-Second Meat Thermometer to check the temp and ensure it reaches its optimal doneness. Remove and set aside.

In the same skillet, add chopped white onion, mushrooms, minced garlic, and red bell pepper. Saute until softened. Then add spinach, heavy cream, and Parmesan cheese. Season with salt and black pepper.

Bring the sauce to a gentle boil, then add lemon slices and the seared salmon back into the pan. Cover and simmer over medium-low heat for 5 minutes. Serve and enjoy!
