Vanilla Butter-Glazed Lamb Chops

- 2 lbs lamb chops
- 1 lb asparagus
- 1 tsp paprika
- 2 tbsp butter
- 1 tbsp barbecue rub
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 4 garlic cloves (crushed)

Rinse lamb chops under running water and thoroughly pat dry with paper towels.

Evenly sprinkle paprika, barbecue seasoning, crushed garlic, rosemary, and thyme over both sides of the lamb chops. Rub butter into the meat. Marinate for 30 minutes to enhance flavor. Insert the probes of a ThermoPro TP972 Twin TempSpike Plus and set temperature to 165°F.

Heat a heavy-bottomed skillet over medium-high heat. Add olive oil. Once oil begins to smoke slightly, add lamb chops and sear each side for 2-3 minutes.

Remove seared lamb chops, slice into portions, and plate with roasted asparagus.
