Honey-Glazed Roasted Pork Ribs

- 4 lbs pork ribs (slab or cut into sections)
- 4 tbsp yellow mustard
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tbsp paprika
- ¼ cup apple cider vinegar
- 2 tbsp honey
- 4 tbsp butter
- 2 tbsp barbecue sauce

Rub the ribs evenly with yellow mustard. Season generously with salt, black pepper, and paprika. Let marinate for 5 minutes. Insert the ThermoPro TP961 TempSpike probe into the thickest part of the meat, avoiding the bone. Set the target temperature to 165°F.

Wrap the ribs tightly in aluminum foil and place on a baking sheet. Roast in the middle of a preheated oven at 375°F for 1 hour.

Carefully open the foil packet. Add butter, honey, and apple cider vinegar around the ribs, then reseal the packet tightly. Return to the oven and continue roasting for another hour.

Unwrap the ribs and brush the surface evenly with barbecue sauce. Roast uncovered for an additional 15 minutes, or until the internal temperature reaches 165°F and the glaze is sticky and caramelized.
