- 1.25 lbs. Pork Tenderloin
- 1 Tbsp. Avocado Oil
- 1 tsp. Paprika
- ½ tsp. Salt
- ½ tsp. Black Pepper
- ½ tsp. Garlic Powder
- ½ tsp. Coriander
- ½ tsp. Sugar Mango Salsa
- 2 small Mangoes cubed
- cubed ⅓ cup chopped Cilantro 1 Avocado
- cubed ½ cup minced Red Onion Juice
- ½ Lime Pinch of Salt
HOW TO MAKE Grilled Pork Tenderloin with Mango Salsa
In a bowl, combine the mangoes, cilantro, avocado, and red onion. Squeeze the lime and add a pinch of salt. Set aside.
In another bowl, combine the avocado oil, paprika, salt, pepper, garlic, coriander and sugar. Coat the pork tenderloin in the mixture and refrigerate for 30 minutes while you heat the grill.
Preheat the grill to medium-high heat. Once hot, grill the tenderloin for 1 minute, then turn it 45 degrees to get nice grill marks.
Flip the pork over and do the same on the other side. Keep one burner on high heat and turn the heat off on the other side to create one hot zone and one cool zone.
Move the pork tenderloin over to the cool zone where the heat is off.
Set your Thermopro thermometer to 145 degrees Fahrenheit and place the probe in the thickest part of the tenderloin. Cover the lid and grill over indirect heat until the internal temperature is reached.
Remove the pork from the grill when the internal temperature is reached and allow it to rest for 10 minutes prior to slicing.
Top with the mango salsa and serve with your favorite grilled vegetables.
