It’s that time of the year again. With Mother’s Day coming soon we are all scrambling to find the perfect gift for the most important woman in our life. However not all gifts come wrapped in colorful paper, and a good Mother’s day dinner can be the perfect way to celebrate together.
Nothing is more special than sharing & enjoying a delicious meal with the family. And of course, a homemade meal has that special edge that no restaurant can beat. So, with that in mind, we’ll take a look at 3 Mother’s Day recipes you can easily make at home. Any of these will make a great gift and anybody can follow them with no problem at all.
Beef Tenderloin
These are the ingredients you’ll need to make Beef Tenderloin:
- Olive Oil, Balsamic Vinegar, and Whole Grain Mustard
- Thyme, Rosemary, Bay Leaf, and Garlic
- Honey
- Beef Tenderloin
- Salt and Pepper.
Take a large bowl and mix the condiments in it, this means all of the ingredients except the Beef and Salt/Pepper. Once the mix is ready, you’ll need to add the Beef and cover the bowl with plastic wrap. By doing this we are marinating the meat and allowing it to absorb all the flavor. You can leave this mix in the fridge for an entire day, but just an hour will still work if you are in a rush.
Preheat your oven to 450 and grab a baking sheet. Cover it with aluminum foil and put a wire rack on top. Take out the Beef and dry it with paper towels to make sure it doesn’t drip on the oven. Season it with salt and pepper and place it on the rack.
Baking time will vary based on your preferences, but 20 minutes should work for a rare finish. Afterward, all you need to is let it rest for roughly 5 minutes before slicing and presenting it to your guests.
Beef Tenderloin is ultimately a very simple recipe, but it’s one where the temperature is key to get the perfect cook. A burnt or raw tenderloin is just no good at all. Due to that, we recommend you use a food thermometer to make sure the oven is at the perfect temperature. A good thermometer is a great ally on the kitchen and will be useful for any recipes you make in the future.
Mushroom Risotto
Risotto is the natural evolution of rice. Its unique cooking process allows it to soak all the spices and stock in a way that makes it much more flavorful than traditional rice. Its moist texture is a treat all on its own, and while not inherently a vegetarian meal this recipe won’t include meat. So, whether you follow the instructions to the letter or experiment some, this is a great pick for Mother’s Day.
Here’s what you’ll need for your Mushroom Risotto:
- Vegetable Broth, Olive Oil, Onion, Butter, and Garlic.
- Sliced Button Mushrooms.
- Bay Leaf, Thyme.
- Salt and Pepper.
- Arborio Rice
- Wine
- Parmesan, Peas, and Parsley.
Grab a medium saucepan and put it at medium heat. We’ll use this to simmer the broth, once it’s done you can lower the heat to low.
Now it’s time to take another pot. Heat oil and add onion, make sure to keep stirring until it’s transparent which tends to take 5 minutes. Now it’s time to add the butter, garlic, thyme, bay, and mushrooms. Keep stirring until the mushrooms are golden and then season them with Salt and Pepper. This will roughly take another 5 minutes.
Remove this mixture from the pot and melt some more butter. Now it’s time to add the rice. Keep stirring until the grains feel properly coated in butter. Now you can start pouring wine to let the rice absorb it as well. Now it’s all about your preference. You need to keep stirring until the rice reaches your preferred texture. While you are stirring slowly add the broth to the mix. Add one cup at a time to make sure it’s properly absorbed.
Once it’s done just add the mushrooms, peas, parsley, and grate the Parmesan on top. Risotto is easy to make, however, the key is to always keep stirring. This is a meal that you need to closely look at while cooking, so it’s best to not leave it alone.
Strawberry Cheesecake Pancakes
Sometimes the perfect dessert is all that you need to celebrate a special day. Pancakes are always a classic, but this Cheesecake Recipe makes them even softer. And coupled with a homemade Strawberry Syrup these are the definitive Mother’s Day dessert.
Here’s what you’ll need to grab:
- Strawberries, Sugar, Lemon, and Cornstarch for the Syrup.
- Flour, Baking Powder, and Light Brown Sugar
- Whole Milk and Cream Cheese
- Eggs
- Vanilla Extract, Chopped Strawberries, and Butter
Grab a pan and add the strawberries, sugar, lemon juice alongside 1/4th cup of water. bring this mix to boiling point and crush the strawberries with a spoon to make sure it all mixes. Afterward, reduce the heat and let it simmer for 10 minutes. Meanwhile, take a bowl and mix 2 teaspoons of cornstarch with 2 teaspoons of water. Add this mix after the 10 minutes and now let it all cook for 3 minutes more.
In another bowl mix flour, baking powder, and sugar. Then grab yet another bowl to whisk the cream cheese, milk, vanilla extract, and 2 large eggs. Now combine the two bowls and stir until it’s a singular mix. You can now add the chopped strawberries.
Now you just need to cook the pancakes as usual. Melt some butter at medium heat and cook each side of the pancakes until they are golden. Do it for all your servings and then serve it with the syrup on top.
