A main rule of thumb is that more highly refined cooking oil tend to have higher smoke points.  This will offer more versatility by allowing you to cook at a higher temperature. Meanwhile, some unrefined oils are best used away from the stove. Flaxseed and wheat germ are better used as ingredients in smoothies and salad dressings instead of oil for cooking.
