STEP 1:
Season the whole chicken with a rub of your choice. Using a ThermoPro TempSpike 500-ft Truly Wireless Meat Thermometer as your guide, cook the chicken until it reaches an internal temperature of 165°F (74°C).
STEP 2:
As it cooks, remove the drums from the chicken wing flats and carefully carve out the bones without puncturing the skin.
STEP 3:
To make the buffalo sauce, combine hot sauce, melted butter, garlic, and onion powder in a pan at low heat and mix.
STEP 4:
Shred the cooked chicken and combine with most of the buffalo sauce (set 1/2 cup of buffalo sauce aside for later). Then stuff into the deboned chicken wings.
STEP 4:
Coat the wings in a breading mixture of flour, followed by egg, and then bread crumbs. Fry at 375°F (191°C) until the skin turns brown and crispy, or for about 3-4 minutes.
STEP 5:
Coat the cooked buffalo wings in the extra buffalo sauce you put aside, and enjoy!
