HOW TO MAKE SAUCY BOSTON BUTT
STEP 1:
Score the fat cap 1/4 inch deep. Liberally cover all sides with hot sauce using mustard as a binder.
STEP 2:
Season all sides of the pork butt with your favorite BBQ seasoning. For best results, insert a ThermoPro TempSpike Plus 600-ft Truly Wireless Meat Thermometer to accurately monitor internal cooking temperatures.
STEP 3:
Cook at 275°F (135°C), spritzing the pork butt with a soft drink every hour.
STEP 4:
Remove from heat when the TempSpike Plus probe reaches 195-202°F (91-95°C). Cover in aluminum foil and let rest for 1-3 hours.
