STEP 1:
Core and seed the jalapenos. Mix cream cheese, cheddar, and your favorite seasoning together to use as filling for the jalapenos.
STEP 2:
Wrap the jalapenos with sausage to form an egg shape. Continue by wrapping each armadillo egg with bacon. 1 piece is vertically wrapped, and the other piece is wrapped horizontally. Smoke or bake at 250°F (121°C).
STEP 3:
Begin preparing the glaze by heating sesame oil in a pan. Add garlic and cook until fragrant. Pour in soy sauce, hoisin sauce, rice vinegar, and honey. Stir and simmer on medium heat until the glaze thickens.
STEP 4:
Remove the armadillo eggs from heat. Apply the glaze, then return to the smoker/oven for another hour. The total cook time will be 2-3 hours. Use a ThermoPro Lightning to check that the internal temperature has reached at least 160°F (71°C).
