The origins of Butterfingers

Could you hold your own during a Butterfingers trivia contest? You can if you learn about the candy bar that became a favorite of people around the world around a century ago. The original recipe for the product, packaged in the familiar yellow wrapper, was produced by the Curtiss Candy Company.

the Curtiss Butterfinger post

Curtiss held a contest to name the chocolate-peanut butter bar it was about to introduce to the world in 1923. Who won? A Chicago baseball fan who adopted the word butterfingers because sportscasters had begun to use the term to describe pitchers incapable of holding on to the ball.

Despite brand acquisitions and buy-outs, the recipe for Butterfinger has never changed, and the brand has never lost its sense of humor. On April Fool’s Day, 2008, the company launched a promotion saying that Butterfinger was getting a name change. It was going to be called “The Finger”.

The promotion worked like a charm. Even Butterfinger fans complained they had been fooled! That’s not the only time the company stepped outside its comfort zone. They introduced a short-lived Butterfinger Buzz bar that contained 80mg of caffeine (equal to a can of Red Bull). This product died a quick death for too many reasons to list here!

Before we reveal the ingredients that will morph you into a world-class confectioner, we mention a word that you may never have run into, but it can be critical to the preparation of this awesome Halloween Butterfinger recipe: Tempering. It’s an age-old method of liquifying chocolate so it winds up setting up properly.

Whether you temper your chocolate or skip that step, you will need a candy thermometer to keep temperatures at optimal numbers. If you don’t have one in your kitchen tool inventory, you can substitute a meat thermometer. But it must be the right type of meat thermometer if it’s to do double duty.

We recommend this easy-to-read, dual purpose, ThermoPro Meat Thermometer Wireless TP28 with Dual BBQ Probe so this recipe is prepared exactly as it was meant to be. Although this thermometer is named meat thermometer, its scale is well designed to gauge the temperature of a wide range of food including candy. Ingredients

  • 40 ounces dark chocolate
  • 1-cup sugar
  • 1-cup roasted, salted peanuts
  • ½-cup water
  • ¼-cup powdered sugar
  • 2-1/4 Tbsp. molasses
  • 2 Tbsp. corn syrup
  • 1 Tbsp. corn flakes
  • 1 vanilla bean (split and scraped for the seeds)

Directions: 20 steps to create homemade butterfingers

  1. Preheat your oven to 200-degrees F.
  2. Line a jelly roll pan with a non-stick silicone mat, baking spray or parchment paper. Silicone mats are particularly useful when you undertake this recipe.
  3. Mix water, sugar, molasses, corn syrup and vanilla bean seeds together in a medium-sized pot.
  4. Cook over medium heat, while stirring consistently, until the sugar melts and the mix simmers.
  5. Place your thermometer into the mix and simmer until the temperature reads between 280- and 290-degrees.
  6. Grind peanuts and powdered sugar in a blender or food processor; set aside.
  7. grid peanut with surgar

  8. When the proper temperature is reached, pour the wet mix over the pan.
  9. Wear protective mitts while holding the pan to distribute the mixture.
  10. Distribute the peanut/powdered sugar layer atop the hot mixture, so it covers 2/3rds of the surface.
  11. Cool and fold the 1/3rd of the mix over the peanut section.
  12. Fold the candy in half, so you wind up with a 3-layer mound.
  13. Place the pan back into the oven for 5 minutes to make the mixture more pliable once more.
  14. Remove the pan and the candy mound, using a rolling pin to shape the mixture into a rectangle.

  15. Once again, fold the mix into thirds. If the mixture starts to harden, return to the oven for a minute or so.
  16. Sprinkle the surface with corn flakes and again fold into thirds. Warm in the oven for about 4 minutes.
  17. Roll the candy to a ½-inch thickness before placing on a cutting board.
  18. Trim the edges of the rectangle so you can cut the whole into 10 evenly-sized bars with a sharp knife.
  19. Temper or melt 12-ounces of chocolate; drizzle it over the bars.
  20. Flip the bars over and drizzle more chocolate over the tops with a pastry brush.
  21. Once the chocolate has set, heat or temper the remaining chocolate so the bars can be dipped and thoroughly coated with chocolate before cooling and setting.
