STEP 1:
Prep the meat by using a sharp knife to take off as much silver skin and tendons as possible. Truss the meat using butcher’s twine for a more even cook.
STEP 2:
Apply hot sauce or mustard as a binder, and use your favorite BBQ rub. Insert the ThermoPro Twin TempSpike 500′ Wireless Meat Thermometer to monitor your ingredients as they cook.
STEP 3:
Set smoker to 250°F (121°C). Once the bark of the meat sets (in about 3 hours), begin spritzing every hour with apple juice or beer.
STEP 4:
When the meat reaches an internal temperature of reaches 170°F (77°C), remove from heat and place in a ½ pan. Pour in two cans of beer and cover with foil, making sure it has been sealed well. Then put back in the smoker until the meat reaches an internal temperature of 203°F (95°C).
STEP 5:
Rest for an hour, and then serve and enjoy!
