To get that medium rare cook on your steak, you would want to remove it from wherever it is cooking when it reaches the temperatures of anywhere between 125-130 degrees Fahrenheit. If you would like yours cooked for a little longer and want it to come off as a medium steak, then the temperatures need to range from 130-135 degrees Fahrenheit. It is all a personal preference based on what the hungry meat eater would enjoy.

Grilled Skirt Steak Recipe

Making a grilled skirt steak really does not take a long time at all. You will need a total of fifteen minutes; five minutes to prep and ten minutes to do the actual cooking. One steak alone can be sliced into enough pieces to feed four or six people at once. To make a delicious grilled skirt steak, you will need the following ingredients: one 1-pound of skirt steak, 1/2 teaspoon of salt, an optional 1/4 teaspoon of freshly ground pepper, and an optional 1/8 teaspoon of cayenne.
    • Step 1: Gather together all of the ingredients that you will need to make your perfect steak.
    • Step 2: If opting to do so, your next step would be to lightly salt the steak to give it more dynamics in flavor. Place the salt you will use into a small bowl, mixing it in with the pepper and cayenne if you are choosing to use those ingredients as well.
    • Step 3: Once those three ingredients are properly mixed together, sprinkle the salt liberally all over the steak. Once this is done, you may let your steak sit for about thirty minutes at room temperature. If you are preparing your steak the night before you are going to be cooking and serving it, then you may place the meat in the fridge overnight. Just be sure to let it sit at room temperature or at least give it time to chill before you go throwing it onto the grill. This will help to make sure that the steak cooks evenly on all sides.
    • Step 4: While your meat is sitting for those thirty minutes, you can begin checking on the status conditions of your grill. You should make sure that the cooking grates that are above the charcoal (or your gas grill if you have one of those) is sparkling clean and oiled well enough that you are ready to go as soon as your steak is done sitting. To know if your grill is hot enough, you should be able to place your fingers one inch above the flames for only one second before it starts to become uncomfortable. A tip for using a charcoal grill is to keep the fire on one side so that you have a resting place to move your steaks to if they need to cool for a few seconds, but you also want to continue cooking them. Gas grills allow you to turn the fire off whenever you see fit.
    • Step 5: Now it is time to place your steaks on the grill. Set the steak on the grill and do not move it until that side is completely cooked and you are ready to flip it onto the other. The steak will let you know when it is prepared to be flipped and will release itself from the grill. This process takes about three minutes for a medium rare steak and approximately four minutes for a medium cooked one.


    • Step 6: Once the one side is finished cooking, turn the steak over and repeat the process. Again, three minutes for medium rare and four minutes for medium. Once the steak has cooked on both sides, it is time to test your temperatures.     • Step 7: Once you have your steaks at the temperatures you want, you can remove them from the grill. Then cover them loosely with foil and allow them to rest for about ten minutes. This brief amount of time gives the steak the chance to finish cooking itself properly and allows the juices to flow through the entire meat. This step is significant because you want to make sure you put the right finishing touches on all of the hard work you just did.
    • Step 8: Using a sharp knife, slice the meat going against the grain and make sure to serve it either as a hot, warm, or room temperature. The great thing about skirt steaks is that they are so rich in flavor that your cold leftovers actually go great as a side to these meats. If you choose to add even more flavor to your steak, you may also sprinkle just a little bit more of some salt and pepper on there. To really give it a complex flavor profile, consider adding just a small dollop of butter onto the top of the steak. It will really drive those taste buds crazy.
