Smoked Cow Tongue

- Water to boil

- Celery

How to Make SMOKED COW TONGUE
STEP 1:
Boil your beef tongue with your vegetables for 3 hours on medium heat or pressure cook for 1½ hours.
STEP 2:
Let the tongue cool down and peel the skin off. Season with your favorite beef rub and smoke at 225°F (107°C). Use a ThermoPro TempSpike 500-ft Truly Wireless Meat Thermometer to check when it reaches an internal temperature of 130°F–150°F (54°C–66°C). The smoke is for the seasoning to set in and to impart some smokey flavor.
STEP 3:
Enjoy by itself, or serve on a taco, bao, or sandwich.
