Crispy Pork Belly Bites
INGREDIENTS
The Pork:
- 2 cups (500 g) pork belly, cut into cubes
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp mixed herbs
- 1 tsp black pepper
- ½ tsp salt
- ½ tsp cayenne pepper
- 1 tbsp olive oil
The Glaze:
- ⅕ cup (50 g) butter
- 2 tbsp honey
- 2 tsp apple cider vinegar
- 2 tsp soy sauce
- 1 tsp Dijon mustard
- 1 tbsp brown sugar
For Frying:
- Canola oil
HOW TO COOK CRISPY PORK BELLY BITES

Season the Pork:
In a bowl, combine the pork belly cubes with smoked paprika, garlic powder, onion powder, mixed herbs, black pepper, salt, cayenne pepper, and olive oil. Mix well until the pork is evenly coated. Place the seasoned pork belly on a wire rack and slow cook at 130°C (265°F) for 2 hours. Using a ThermoPro Lightning 1-Second Instant-Read Meat Thermometer, remove from heat once the pork reaches an internal temperature of 180°F (82°C). Aallow the pork to cool.
Prepare the Glaze:
In a saucepan, add the butter, honey, apple cider vinegar, soy sauce, Dijon mustard, and brown sugar. Bring the mixture to a gentle boil, stirring continuously. Once it starts to bubble, reduce the heat to low and simmer until the glaze thickens slightly. Set aside.
Fry the Pork:
Using the ThermoPro Lightning to check the temperature, put canola oil in a deep pan and heat to 180°C (350°F). Fry the pork belly in batches until golden brown and crispy, about 3-4 minutes per batch. Remove and place the pork on paper towels to drain excess oil.
Toss in the Glaze:
Transfer the fried pork belly to a bowl and pour the glaze over it. Toss well until the pork bites are fully coated.
Serve:
Serve, garnished with fresh chives if you like. Enjoy the crispy pork belly bites!
