INGREDIENTS
- Meatloaf:
- 1 lb. Ground Beef
- 1 lb. Ground Pork
- 1/2 cup chopped Parsley
- 1/4 cup Almond Flour or Breadcrumbs
- 1.5 cups Shredded Zucchini
- 1 cup shredded Carrots
- 1 cup chopped Red Onion
- 1 tsp. Salt
- 1/2 tsp. Black Pepper
- 4 cloves grated Garlic
- 2 Eggs
- 1/4 cup Tomato Paste
- Broccolini:
- 1 lb. Broccolini
- 4 cloves Garlic, sliced
- 2 Tbsp. Olive Oil
- Salt and Pepper
HOW TO MAKE Easy Meatloaf with Broccolini
Step 1. Preheat your oven to 375 degrees. Grate the zucchini and carrots and press them between paper towels to soak up any moisture.
Step 2. In a large bowl, mix the ground beef and pork, parsley, almond flour, shredded zucchini, shredded carrots, red onion, salt, pepper, garlic, eggs, and half of the tomato paste.
Step 3. Press the meat mixture into a parchment-lined loaf pan or baking dish (you may need to use two depending on the size of your pans). Top the meatloaf with the remaining tomato paste.
Step 4. Set your Thermopro thermometer to 165 degrees Fahrenheit and insert the probe in the center of the ground meat. Bake the meatloaf until it reaches 165 degrees.
Step 5. While the meatloaf is cooking, toss the broccolini with the garlic, olive oil, salt and pepper. Lay them in a single layer on a parchment-covered sheet pan.
Step 6. Roast for 10 minutes, then flip them over and roast for an additional 10, or until they are crispy.
Step 7. Allow the meatloaf to cool slightly, then slice it and top with chopped parsley.
