The recipe features crowd favorite holiday flavors which yields 32 cookies. You can freely cut circular shapes for your cookies, or you can get creative and use a variety of mold shapes like gingerbread man, tree, star, heart, and many more.


  • 5 cups all-purpose flour
  • 2 tsp. baking soda
  • 4 tsp. ground cinnamon
  • 3 tsp. ground cloves
  • 1 tsp. ground nutmeg
  • 1 tsp. ground ginger
  • ½ tsp. Kosher salt
  • 2 cups dark brown sugar (lightly packed)
  • ½ cup vegetable oil
  • ⅔ cup unsulfured molasses
  • 2 eggs (large, room temperature)
  • 2 ½cups chopped crystallized ginger
  • granulated sugar (for rolling the cookies or dusting)
  • icing for finishing touches


Step 1: Prepare your equipment

Baking comes with preparing a variety of kitchen tools and equipment. Ready your spatula, mixing bowls and molds and set them aside. Preheat the oven to 350° F and use your reliable food thermometer (preferably with a long probe) to measure the correct temperature. Then, line 2 sheet pans with parchment paper.

Step 2: Combine dry ingredients

Get a large mixing bowl and sift the flour, baking soda, cinnamon, cloves, nutmeg, ginger, and Kosher salt. Then combine them using your hands. In a separate bowl fitted to an electric mixer to beat the brown sugar, oil, and molasses in medium speed for 5 minutes.Turn the mixer to low speed, add 2 eggs and let it mix for one minute.Scrape the bowl with a rubber spatula and beat it for another minute.

Keep your mixer on low speed and gradually add your dry ingredients to the mixing bowl and mix on medium speed for 2 minutes. Add the crystallized ginger to truly achieve the holiday flavors and continue to mix the dough until it’s fully combined.

Step 3: Mold the dough

Scoop the dough using 2 spoons or a small ice cream scoop if you’re going for the classic circular cookie shapes. With your hands, you can roll each cookie into a ¾ ball then flatten it lightly using your fingers. At this point, you can put a splash of granulated sugar on the cookies’ side then set it aside as you complete other batches.

If you’re going to use a variety of mold, it’s better to have your dough as one big dough and flattened with half an inch thick. Use a rolling pin to flatten it and have fun cutting the dough using your cookie cutters or cookie molds.

Step 4: Bake the cookies

Once you’ve created the cookies and you have put them in your prepared tray, you may now put them in the oven and let it bake for exactly 13 minutes. Make sure you’re monitoring it 1-2 minutes before the mark to check if it’s already baked in golden brown color and if it’s baked according to your liking. The cookies could be cracked on top but soft inside or it could have the surface of gingerbread.

Step 5: Decorate and get creative

Let the cookies cool on the sheets for 1-2 minutes and then transfer them in a separate platter for decoration. At this point, you can decide whether to sprinkle some granulated sugar or decorate the cookies with icing of your liking. Then, let the decor settle down to the wire racks to cool completely.
