INGREDIENTS

  • Rack of lamb
  • Seasoning
  • 1/2 tbsp butter
  • 1 tbsp rosemary, chopped
  • 1/2 tbsp tarragon, chopped
  • A dash of cayenne pepper
  • 1/3 cup red wine

HOW TO MAKE ROCKIN' RACK OF LAMB WITH A RED WINE HERB DEMI-GLACE

STEP 1:
French the rack of lamb and lightly score the fat cap at about 1/16 of an inch.

STEP 2:
Marinate all sides with seasoning.

STEP 3:
To closely monitor the cooking progress of your ingredients, insert both probes of a ThermoPro Twin TempSpike into the center of the meat at both ends.

STEP 4:
Cook on your grill or oven at 400°F (204°C) for about 20 minutes or until your desired temperature.
 
STEP 5:
To make the demi-glace, combine the butter, rosemary, tarragon, cayenne pepper, and red wine.
 
STEP 6:
Cook on high heat for 2 minutes, then reduce the temperature to low and deglaze using red wine until desired thickness.
