Cheesy Buffalo Chicken dip
INGREDIENTS
For the chicken:
- 1.5 lbs. boneless skinless chicken breast, thinly sliced
- 1.5 tbsp. Avocado or olive oil
- juice from 1/2 lemon
- 1 tsp dried dill
- 1 tsp. dried parsley
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/2 tsp. salt
- 1/2 tsp. black pepper
For the dip:
- 1/2 cup buffalo sauce
- 1/3 cup ranch dressing
- 1/3 cup mayo
- 2 tbsp. milk/coconut milk
- 1 cup shredded cheese (we used cheddar)
- Chopped chives
For serving:
- Sliced carrots and celery
- Chips or crackers

How to make the best buffalo chicken dip ever!
Step 1. Preheat your oven to 375 degrees Fahrenheit.
Step 2. In a bowl, combine the oil, lemon juice, dill, parsley, garlic powder, onion powder, salt and pepper. Toss the chicken breasts in the mixture and let it marinate for 5-10 minutes.
Step 3. Place the chicken in a single layer on a sheet pan or glass dish and place in the oven for about 20 minutes, or until the internal temperature reads at least 165 degrees Fahrenheit on your ThermoPro thermometer. Shred the chicken with two forks.
Step 4. In a large bowl, combine the buffalo sauce, ranch dressing, mayo, and milk. Mix in the shredded chicken.
Step 5. Pour the chicken mixture into a small baking dish. Top with shredded cheese. Bake for 20 minutes or so, or until the mixture is bubbly.
Step 6. Remove from the oven and top with chopped chives. Serve with your favorite veggies and chips or crackers.
