Chicken Fajita Bowls
INGREDIENTS
- 1.5 Tbsp. Avocado Oil
- 1.25 lbs. Chicken Breast strips or Chicken Tenders
- Use your Favorite Taco Seasoning Blend or make your own: (2 tsp. Chili Powder, 1 tsp. Paprika, 1 tsp. Cumin, 1/2 tsp. Salt, 1/2 tsp. Oregano, 1/2 tsp. Garlic Powder, 1/2 tsp. Onion Powder)
- 1 sliced Red Bell Pepper
- 1 sliced Yellow Bell Pepper
- 1/2 sliced Red Onion
- Juice from 1/2 Lime
- 2-3 Tbsp. Broth
Sides to Serve with:
- Shredded Lettuce
- Tomatoes
- Sliced Radishes
- Black Beans
- White Rice
- Avocado
- Salsa
- Limes
How to Make it
Step 1. Combine the chili powder, cumin, satl, oregano, garlic powder and onion powder in a bowl. If you don’t have these spices, you can also substitute your favorite taco seasoning blend.
Step 2.Toss the chicken breast strips in the spice blend.
Step 3. Heat the avocado oil in a skillet over medium-high heat.
Step 4. Once hot, add the chicken to the pan. Brown the chicken on all sides for about a minute, then add in the pepper slices and onion slices. Saute for an additional 5 minutes, adding the broth and lime juice about halfway through.
Step 5. Place your ThermoPro thermometer probe in the thickest part of one of the chicken pieces. The temperature should read at least 165 degrees Fahrenheit.
Step 6. Serve the chicken and veggies alongside your favorite fixings or in a tortilla. We chose lettuce, tomatoes, radishes, black beans, rice, avocado, and salsa.
