Pepper Sausage Hero
- 1.5 lbs. Italian Sausage
- 2 Red Bell Peppers, thinly sliced
- 2 Green Bell Peppers, thinly sliced
- 1 Yellow Onion, thinly sliced
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Dried Basil
- 1/2 tsp. Dried Oregano
- 1/4 tsp. Salt
- 1-15 oz. Can of Whole Peeled Tomatoes
- 1/4 cup Water
- 2 Tbsp. Tomato Paste
- 1.5 cups Shredded Mozzarella
- 4 Hero Rolls
- Chopped Fresh Basil, to garnish

HOW TO MAKE Pepper Sausage Hero
Step 1. Preheat your grill or grill pan to medium-high heat. Once hot, add the sausages and grill for about 2 minutes on each side, or just enough to make nice grill marks. Set them aside to cool slightly and slice into 1” pieces.
Step 2. Meanwhile, heat the olive oil in a skillet over medium heat. Add the sliced onion and saute for 3-5 minutes, or until they are soft and begin to brown.
Step 3. Add the green and red peppers along with the garlic powder, dried basil, dried oregano and salt. Heat over medium heat for an additional 2-3 minutes, stirring occasionally with a wooden spoon.
Step 4. Add in the whole peeled tomatoes with juice along with the water. Use the spoon to slightly crush the whole tomatoes and incorporate them with the other vegetables.
Step 5. Add in the tomato paste and sausage slices and combine using your spoon. Once the sausage is well coated in the vegetable mixture, cover with a lid and reduce the heat to medium-low.
Step 6. Continue cooking until the internal temperature of the sausage slices reads 160-165 degrees Fahrenheit.
Step 7. Uncover the pan and give the mixture a stir. If the sausage and peppers are still too liquidy, continue cooking uncovered for a few minutes until it thickens up.
Step 8. Remove the pan from the stove-top heat and preheat your broiler.
Step 9. Slice 4 hero rolls and lay them cut-side up on an aluminum foil covered sheet pan.
Step 10. Fill the centers of the rolls with the sausage and peppers. Evenly sprinkle the cheese all over the sausage and peppers. Place the pan under the broiler until the cheese is melted and slightly brown. Remove the sandwiches from the oven and top with dried oregano and chopped fresh basil. Fold the sandwich and eat!
