HOW TO MAKE Rib Crown Mac & Cheese
STEP 1:
Take a rack of pork rib and remove the membrane and season with your favorite rub. Use twine to tie it together to form a crown.
STEP 2:
Smoke it at 250°F (121°C) for three hours.
STEP 3:
Apply the barbecue sauce, and return it to the smoker for another two hours.
STEP 4:
As the ribs cook, make the mac & cheese by combining butter, flour, milk, and cheddar cheese in a pan. Once it has melted down, add a block of cream cheese, salt and pepper, and then finally the cooked noodles.
STEP 5:
Use a new ThermoPro Lightning to check that the ribs have reached an internal temperature of 180°F (82°C).
STEP 6:
Remove from heat. Fill your crown with mac and cheese, top with bacon, and serve.
