Steak Bites with Chimichurri Sauce
INGREDIENTS
- Bone-in ribeye
- Olive oil
- Salt and pepper
- Butter
- Yellow potatoes
- Minced garlic
- Heavy cream
Chimichurri sauce recipe
- 1/2 cup parsley, chopped
- 1/2 cup virgin olive oil
- 1 tbsp garlic, minced
- 2 tsp oregano
- 1 tsp salt
- 1 tsp pepper
- Squeeze of lemon juice
- 1 tbsp red wine vinegar
- 1 tsp chili oil or red pepper flakes, crushed
HOW TO MAKE STEAK BITES WITH CHIMICHURRI SAUCE
STEP ONE:
Coat bone-in ribeye with olive oil. Season both sides of the steak with salt and pepper.
STEP TWO:
In a heated pan, add oil along with the steak. Cook while flipping over a few times. Use a ThermoPro Lightning One-Second Instant-Read Meat Thermometer to help you determine when it has reached your desired temperature. For medium-rare, this would be 130°F-135°F (54°C-57°C). Remove from heat before reaching this temperature.
STEP THREE:
Move the steak to a cutting board, and add butter on top. Cut steak into bite-sized pieces, then return to pan and cook until reaching your desired temperature.
STEP FOUR:
For mashed potatoes, boil yellow potatoes with skins on until soft, then mash. Add butter, minced garlic, heavy cream, salt and pepper, and mix well.
STEP FIVE:
Prepare the ingredients for the chimichurri sauce, and cook in pan until ready.
STEP SIX:
Serve the steak on a bed of mashed potatoes, topped with the chimichurri sauce. Enjoy the steak bites!
