- 2 lbs. Skirt Steak
- 1 cup chopped Cilantro
- 4 cloves minced Garlic
- Juice from 1 Lime
- 3 Tbsp. Olive Oil
- 2 Tbsp. Coconut Aminos
- 1 Tbsp. Honey
- 1 tsp. Cumin
- 1 tsp. Chili Powder
- ½ tsp. Salt
- ½ tsp. Black Pepper
- ½ tsp. Paprika
- Chopped Tomato
- Chopped Lettuce
- Chopped Avocado
- Diced Onion Tortilla Shells
- Any other fixings you like
HOW TO MAKE Carne Asada Tacos
Step 1. To prepare the marinade, combine the cilantro, garlic, onion, lime juice, olive oil, coconut aminos, and honey in a large bowl. Add the cumin, chili powder, salt, pepper and paprika and mix together.
Step 2. Reserve 3 tablespoons of the mixture in another small bowl. Cut the skirt steak into pieces no more than 10-12 inches long.
Step 3. Toss the steak in the mixture. Cover the bowl and marinate for 1-2 hours.
Step 4. Preheat your grill to medium high heat. Once hot, place the pieces of steak on the grill. Grill for 45 seconds, then turn the steaks 90 degrees to produce nice grill marks. Repeat on the other side. Check the temperature with your Thermopro thermometer.
Step 5. Skirt steak is ideal around 130 degrees or so as it will continue to cook after you take it off of the heat, but you can cook to your desired doneness, up to about medium well.
Step 6. Depending on how thick your steaks are, you may need to cook them a bit longer to reach your desired temperature.
Step 7. Slice or chop the steak and toss it into the previously reserved marinade.
Step 8. Assemble your tacos with the meat, fresh tomatoes, onion, lettuce and avocado. Garnish with some chopped cilantro and enjoy!
