STEP 1:
Brine the turkey legs in salt & brown sugar, and other spices.
STEP 2:
Rinse it off and dry. Inject with creole butter, and cover with Creole blend seasoning.
STEP 3:
To accurately monitor the internal temperature of the turkey legs as they cook, use a ThermoPro Twin TempSpike 500-ft Dual-Probe Meat Thermometer .
STEP 4:
Heat your smoker to 275°F (135°C), and put in the turkey legs. After about 1 1/2 hours, drizzle with melted butter, then continue to cook the legs until they reach an internal temperature of 175°F (79°C).
STEP 5:
