Fried Pork Belly
INGREDIENTS
Ingredients:
- 3 lb pork belly
- 10 cloves garlic
- 1 onion
- 1 bunch parsley stems
- 1 tbsp salt
- 1 tbsp whole peppercorns
- 2 habanero peppers (optional)
Dipping Sauces:
- Guacamole
- Queso blanco
- Pico de gallo
HOW TO MAKE Fried Pork Belly
STEP 1:
Score the fat cap of the pork belly and cut into ¾ inch slices. Add to a pot with your aromatics and cover with water. Simmer for about 2 hours, then remove and set aside to cool
STEP 2:
Heat up oil in a pan, and use a ThermoPro TP450 Infrared Thermometer to check the temperature has reached 325°F-330°F (163°C-166°C). Fry the pork belly for about 6 minutes until lightly golden.
STEP 3:
Remove the pork belly, increase the oil’s temperature to 350°F (177°C), and fry again until crispy.
STEP 4:
Season with salt and serve with dipping sauces.
