Juicy Alabama Spatchcock Chicken
INGREDIENTS
- Whole chicken
- BBQ rub
- 2 cups mayonnaise
- ¾ cup apple cider
- 2 tbsp horseradish
- 3 tbsp brown sugar
- Pinch of salt and pepper
- ¼ tbsp BBQ rub
- 2 tbsp lemon juice
- 1 tbsp mustard
HOW TO COOK JUICY ALABAMA SPATCHCOCK CHICKEN
STEP 1:
Using a pair of strong kitchen shears, cut out the spine of the chicken and clean its interior. Turn it over and crush it flat by pressing on the breastbone. Dry the surface of the chicken using paper towels.
STEP 2:
Pre-heat your smoker or grill to 350°F (177°C).
STEP 3:
Season your chicken with your favorite BBQ rub. For best results, use a ThermoPro Twin TempSpike Dual-Probe Meat Thermometer to track the cook. Insert its probes into the thickest part of the meat, and monitor temperatures remotely using your smart device.
STEP 4:
Place the chicken in a raised pan, and put in your smoker or grill.
STEP 5:
Mix the ingredients for the Alabama BBQ sauce, and combine until smooth. Reserve half for later use.
STEP 6:
Once the Twin TempSpike shows the internal cooking temperature of the chicken has reached 155°F (68°C), brush the chicken with half of the Alabama BBQ sauce. Continue to cook until the internal temp hits 175°F (79°C).
STEP 7:
Let rest for a few minutes after removing from heat. Serve the spatchcock chicken with the Alabama white sauce for dipping.
