Pumpkin-Roasted Pulled Pork
INGREDIENTS
- 1 large pumpkin
- 8 lb pork shoulder
- 2 tbsp BBQ dry rub
- 1 tsp pumpkin spice
- 2 tbsp canola oil
HOW TO MAKE Pumpkin-Roasted Pulled Pork
STEP 1:
Score the fat on the pork shoulder, then rub oil all over the pork. Season with pumpkin spice and BBQ rub on all sides.
STEP 2:
Insert the TempSpike probe into the thickest part of the shoulder. Place it on the smoker at 250°F (121°C) for 5-6 hours until it reaches an internal temperature of 170°F (77°C).
STEP 3:
Split the pumpkin in half lengthwise and remove the seeds. Place the pork shoulder inside the pumpkin and roast until it reaches an internal temp of 200°F (93°C).
STEP 4:
Let the pork rest for 30 minutes, then pour in your favorite BBQ sauce and shred the pork.
