
Chocolate Covered Peanut Butter Bites

- 1/3 cup Crunchy Salted Peanut Butter
- 2 Tbsp. Unsalted Butter, melted
- 1/4 cup + 2 Tbsp. Powdered Sugar
- 1/2 tsp. Vanilla Extract
- 3.5 oz. Dark Chocolate, chopped Powdered Sugar for dusting

HOW TO MAKE Chocolate Covered Peanut Butter Bites
In a bowl, combine the peanut butter, butter and vanilla extract. Slowly pour in the powdered sugar a little at a time until fully combined.
Form the peanut butter into balls, eggs, or whatever shape of your choosing and place on a parchment covered sheet pan. Place in the fridge for 30 minutes.
While the peanut butter is chilling, temper the chocolate. Heat a small pot with an inch or so of water on the bottom over medium heat until it reaches a simmer. Place a heat-safe bowl on top of the pot and add in 2/3 of the chocolate. Stir frequently until all of the chocolate is melted and the temperature of your Thermopro thermometer reads 115 degrees Fahrenheit.
Remove the bowl from the heat. Slowly stir the remaining chocolate into the bowl, a few chunks at a time, until the thermometer reads approximately 80 degrees. Quickly place the pot back onto the heat and stir until the chocolate reads 85-89 degrees.
Carefully dip each of the peanut butter pieces into the chocolate, using a fork underneath the peanut butter so extra chocolate drips off of the chocolate. Set the chocolate covered peanut butter bites on a parchment covered sheet pan and allow to fully cool so the chocolate hardens. After they harden, you can place them in the fridge for a few minutes to firm up.
Dust each of the bites with sifted powdered sugar and enjoy.
