Cooking oysters is relatively easy, usually grilled flavored with either garlic and butter or eaten raw with salt and lemon juice. But today’s recipe will spice up your typical oyster recipe. Get your chef’s hat and apron on, and get grilling!
Ingredients
- 8 dozen oysters
- Cajun sauce or Hot sauce
- ¼ cup Butter
- ¼ cup Minced garlic
- Salt (to taste)
- Pepper (to taste)
Grilling oysters
- Preheat the grill to medium-high (very important, otherwise they will not get hot enough to pop open the shells). It’s better to use the charcoal grill for oysters and to get to high temperatures that you need to pop off the shells of the oysters. To make sure the grill is hot enough, use a reliable food thermometer (an instant-read or a digital one with a long probe).
- Check oysters for freshness by tapping each oyster gently on a work surface to make sure they close their shells when tapped. Discard any oysters that don’t close.
- Place the oysters on the grate with the deeper shell down to hold in the juices.
- Grill for 5-8 minutes. Remove each oyster from the grill the second the shell pops open (even if it is ever so slightly open) dumping out the juices onto the coals. Do not delay in removing them from the grill, as they can easily get charred and their shell could crack open with too much temperature.
- Pry off top shells with an oven mitt, pull the oyster off of the top shell. Dump out juices, return the oyster to the shell and serve immediately.
