  • Favorite marinade

HOW TO MAKE ULTIMATE TALLOW-WRAPPED PRIME RIB

STEP 1:

Source a quality prime rib and inject it with wagyu beef tallow.

STEP 2:

Apply marinade to all sides and season with salt, pepper, and garlic.

STEP 3:

Insert a ThermoPro Twin TempSpike for best results when monitoring internal cooking temperatures.

STEP 4:

Tie tallow bones around the roast and secure with butcher’s twine.

STEP 5:

Cook over a rotisserie, cooking over low heat for about 2 hours.

STEP 6:

Make your compound butter with tallow bones, rosemary, tarragon, and garlic. Cook and reduce with white wine to your consistency to baste it with more flavor.

STEP 7:

When the roast reaches 115°F (46°C), remove bones, sear the outside with a culinary torch and the temperature will rise to around 125°F (52°C). Cut, and add more compound tallow.
