Blue Cheese Compound Butter

  • 2 sticks butter
  • 8 oz crumbled blue cheese
  • 1 tbsp Worcestershire
  • ½ tsp smoked sea salt
  • ¼ cup sliced scallions
  • ¼ cup chopped parsley
  • 3 cloves roasted garlic
  • ⅓ cup panko
  • breadcrumbs

HOW TO MAKE Tomahawk Ribeye with Blue Cheese Crust

STEP 1:
Prepare the steak by seasoning it with sea salt and olive oil.

STEP 2:
Fire up your pizza oven and put the steak inside once it’s ready. Use a ThermoPro TP450 Infrared Thermometer to make sure the pizza oven has reached a temperature of 650°F (343°C). 

STEP 3:
Use a ThermoPro Lightning to check that the steak cooked medium with an internal temperature of 135°F (57°C). Remove from heat once it has reached the right temperature.

STEP 4:
Make a blue cheese compound butter by combining the listed ingredients. Apply to the surface of the steak, and let it bake in for a few minutes.
